Breakfast
Aappam is a Keralan favourite and there are many varieties. For break-fast this pancake is usually made from a rice flour and toody batter. it has a thick, spongy center and very fine lacy outer section. It's usually eaten with spiced sauce, sometimes with fruit.
Idlis and dosa are popular breakfast dishes in Kerala. Both originate in neghibouring Tamil nadu. An idili is a small steamed cake made of rice flour and black lentils flour. Dosa is the famous pancake, large and very fine.
Puri is also popular. It's made of a batter that is quickly deep-fried causing it to puff up. All these dishesh are usually served with small pots of spiced sauces.
Puttu is another popular breakfast dish. It is made from rice flour dough combined with shreded coconut steamed in a bamboo tube. It is served with banana or plain with sugar.
Idi-appam is rice noodles usually served with coconut milk but they may also accompany meat dishes.
Uthappam is thick pancake-like dish. It may be plain or combined with vegetables such as onion or tomatoes. It's gently fried and has a consistency somewhat like an omelette.
